This is my Grandmothers' recipe. It's so delicious, it is so hard to eat just one piece!
It's easy as pie to make. No pun intended =] That was my attempt at a joke. I think I failed.
1/2 cup of flour
1 cup of sugar
2 cups of milk
3 egg yolks(save the egg whites)
1 1/2 tablespoons of cocoa
1 teaspoon of vanilla
2 tablespoons of butter
1 pre-made pie shell(bake shell according to package)
1.Put pie shell in the oven and bake as directed.
2. While the pie shell is cooking add all your ingredients to the saucepan and bring to a boil over medium heat. Keep stirring mixture as it thickens or it will stick!
3. Once the filling has finished cooking put to the side and take the 3 leftover egg whites and put them in a bowl and whip them with an electric mixer until the egg whites form stiff peaks.( I always add a bit of sugar to the meringue, it adds just a slight sweetness.)
4. Pour filling into cooked pie shell and top with meringue.
5. Depending on the oven bake between 325-350 until the pie is a light brown.
*Also if you omit the cocoa from the filling recipe and add 1/2 cup of coconut you will have the most delicious coconut pie. Sprinkle a bit of the coconut flakes onto of the meringue before putting it in the oven. It adds a lovely little touch!)
Well, here's one of my most favorite recipes to make. I know this one by heart. It brings back memories of my Grandmother, it's the little memory of her I will always have.
